Ingredients
- 600g mixed dried fruit - chopped (raisins, prunes, figs, apricot, dates, sultanas)
- 1 tsp ground cinnamon
- 1 tsp vanilla bean extract
- 1/4 tsp nutmeg
- Zest and juice from 1 orange
- 3 tbsp oil
- 3 eggs
- 200g ground almonds
- 50g walnuts
Instructions
- Preheat oven to 150c. Prep cake time with baking paper.
- Combine dried fruit, spice, vanilla, orange zest + juice, oil and eggs
- Add almonds and walnuts and mix
- Spoon mixture into baking tin and bake for 1hr 30mins. Check with skewer to see if it comes out clean. If not bake for a further 20minutes. Cover top if necessary to prevent over-browning
- Allow to cool and remove from tin.
