For the cupcakes
- •1/2 cup cocoa powder
- •1/4 cup coconut flour
- •1 tsp baking powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •1/2 cup raw agave or honey
- •3 tbsp almond butter
- •3 organic, free range eggs
- •5 tbsp melted coconut oil
- •1 tbsp tamari
- •1 tsp apple cider vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •1 tsp vanilla extract
- •2/3 cup cashew nut butter
- •1/2 cup maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •2 tsp tamari
For the cupcakes
- Preheat oven to 160•C fan. Sift the cocoa powder, coconut flour and baking powder into a mixing bowl. In a separate bowl, beat the agave/honey and the almond butter together. Add the remaining wet ingredients.
- Add the wet ingredients to the dry and whisk thoroughly until smooth. Prepare your muffin tray with cupcake liners and fill each one. The cakes will rise! Expect a runny consistency.
- Bake for 20 minutes or until a knife comes up clean.
To make the frosting
- Mix the nut butter, maple syrup and tamari together with a fork. Smother on the top of each cupcake! ENJOY 😍😍😍
