Triple nut, apple and apricot stuffing balls

Ingredients
- •1/2 red onion, finely chopped
- •150g mixed nuts (I used almonds, hazelnuts and pecans), finely chopped
- •240g cooked green lentils ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •30g gf breadcrumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •1 small apple, grated
- •1 medium free range egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- •5 dried apricots, finely chopped
- •small bunch of sage, chopped
- •1 tsp mixed herbs ⠀
Instructions
- Preheat oven to 180•C. Sauté onion in frying pan until slightly soft and browned.
- Set 2 tbsp of nuts to one side to use on the outside of the balls.
- Put ALL ingredients into a mixing bowl and combine until all stuck together. Line a baking tray with grease proof paper and a little coconut oil.
- Scoop out walnut-sized chunks of stuffing, roll into balls, then roll in the plate of chopped nuts to coat. Place on baking tray and cook for 20-25 minutes in the oven. Let them cool for a few minutes before serving to firm up. 👌🏼☺️

- Makes 18 balls. Serves 6.
